We might still get a few more peppers before the cold weather sets in, but Jim picked most of them yesterday and this morning I seeded them and put them on trays for the freezer.
I used to always pickle and can them, but we like the flavor so much this way. Once they freeze, I vacuum seal them into small bags that store well in the freezer.
I leave them in halves rather than chop them prior to freezing, so that I can tell how many peppers I’m grabbing for a dish. They’re quite easy to chop while still frozen.
Despite wearing gloves during the seeding process, the oil still seeps through the gloves onto my skins, and I have to try really hard not to touch my eyes for a day or two!
