Talk About A Powerhouse Breakfast!
I keep fiddling with my mix, aiming for high nutrition and lower calories. Last night I decided to use water instead of milk, almond milk, oat milk, or coconut milk. You know what? It’s delicious!
Overnight Oats with Blueberries and Honey
1/2 cup raw rolled oats
2 tablespoon freshly ground flax seeds
1 tablespoon each pumpkin seeds, chia seeds, and hemp hearts, or seeds of your choice.
1 cup water
Combine ingredients in a covered bowl, and store oats in the refrigerator overnight.
Serve oats straight out of the refrigerator (or warm them up briefly in the microwave if you’d prefer, I love them cold!), topped with anything you’d like. I added about a quarter cup of blueberries from our freezer, and a teaspoon of honey. Everything here, we have plenty of in our pantry or freezer. That way, I can save our eggs for baking and Cosmo, we feed him three to four everyday.
I did not grind my flax seeds for this bowl, I remembered just as I was headed to bed last night that I wanted overnight oats for breakfast, and I was too tired to bother grinding them… which really only takes a minute. Flax seeds really need to be ground fresh for optimal nutrition, and they don’t digest well left whole.
Chia seeds are the one seed I wouldn’t leave out, as they form a gel like substance when liquid is added and make the consistency of overnight oats perfect.
I’ve tried adding cinnamon, vanilla, and dried fruits, but honestly this is quite delicious as is.
