When You Don’t Feel Like Cooking

I love to cook fortunately, so that’s usually not an issue for me, but there are days when I simply don’t feel like it. yesterday was one of them. I swept and mopped the downstairs, and then started on our taxes. For lunch, I just popped half of the shrimp quesadilla that’d I’d cooked the day before into the Breville (have I mentioned lately how much I LOVE my Breville convection oven?) and enjoyed it thoroughly.

I could eat these every day, but I’d be so freaking fat. I did use whole wheat herbed tortillas, but I didn’t make them so take that with a grain of salt. I put a layer of salsa verde on the bottom, a little sour cream, cheese, onions and garlic, roasted red peppers, mushrooms and shrimp.

I took a six mile walk at the lake with a friend after lunch, and for dinner I still had no urge to cook, so made myself a slice of sourdough toast, a piece of bacon (I keep bacon cooked up in the fridge all the time), a tomato with smoked salt, some Castelvetrano olives (if you’ve never tried them, they are fabulous! They taste nothing like your standard green olive), and a hunk of Brie cheese.

I suppose if I’m going to feed myself today, I should give some thoughts to dinner. Everything I feel like eating is super high calorie… like shrimp and grits. Doesn’t that sound yummy? Or pizza. Oh. Hmmm. YES! I think I’ll go start some dough!

    To me, you fixed food; therefore you cooked. You talked about the olives a good while ago. I had to search for them. Now I keep them on hand. So thank you.

    Your dinner looks divine! I too love to cook but this year of covid has me weary of the kitchen. Now that we’ve been vaccinated we have been out to eat a bit and it’s helped my desire to be in the kitchen. I am home in Arkansas right now with my mom for two weeks and will be cooking for the family some.

      I’ve lost all desire to eat out. I suppose if I lived somewhere that had amazing restaurants I might feel the urge on occasion, but the food is pretty much always a disappointment.

    Sheridan, not too far from you! I’m the same way about restaurants but my husband will eat a burger anywhere so that’s typically what we do. I’m not sure there are “amazing” restaurants anywhere any longer!

      I had to look that up, south of Little Rock! If you’ve never eaten at the Flying Fish on river front there, do! It’s wonderful!

    Hmm, when Dan is out of town, I’ve been known to eat pork and beans out of the can, yogurt three meals a day, and never sit down to eat a single meal. If he ever leaves me, I’ll be down to skin and bones in no time.
